Pumpkin Hummus

We eat a lot of hummus. It’s perfect for snacks, salads, spreads, parties, potlucks, etc. If you invite me over, 9 out of 10 times I’ll bring hummus with me. People are always surprised when I tell them how easy it is to make your own. Throw everything in the food processor and blend till creamy. 

I made this dish for my Thanksgiving appetizer. Great for any fall gathering!


Ingredients:

  • 2 cloves of garlic
  • 2 1/2 tbsp lemon juice
  • 1 cup of canned pumpkin puree
  • 1 15oz can of cannellini  beans, rinsed and drained
  • 2 tbsp tahini
  • 1 tsp cumin
  • 1/2 tsp smoked paprika, a little more for garnish
  • 1 tbsp olive oil, a little extra if too thick
  • salt to taste
  • green onion for garnish

(Serves a party of 10-12)

Throw everything in the food processor and blend till smooth. (I like to blend the garlic with lemon before adding in the other ingredients.) Garnish with green onion and smoked paprika. Serve with pita chips or veggies.
