Detox Vegetable Soup

Visits with friends and family means two things: too much bread and lots of french fries. I can stay on track when it’s just my husband and I, but when others are involved, I try to be easy. Most restaurants have a veggie sandwich with fries or are willing to make me one (I’ve definitely had a lettuce, tomato, and pickle sandwich or two).

The first meal I make when I get home is the Glowing Fridge’s cleansing detox soup. I’ve adapted the recipe to my taste by adding coconut oil, broth, and salt, I always need salt. I will eat a big bowl of this soup for a couple meals, take a hot class, and feel back to normal before the weekend is over. 



Ingredients:

  • 1 tbsp of coconut oil
  • 1/2 of a red onion, diced
  • 3 celery stalks, diced
  • 1 1/2 cups of sliced carrots
  • 1 inch of ginger, peeled and minced
  • 3-4 cloves of garlic, minced
  • 1 crown of broccoli, chopped
  • 1 cup of chopped tomatoes
  • 2 cartons (8 cups) of vegetable broth
  • 1 tsp turmeric
  • 1/4 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 2 large handfuls of chopped collards
  • 1 cup of purple cabbage, chopped
  • 1-2 tbsp lemon juice
  • salt and pepper to taste

(Serves 6-8 bowls)

Heat coconut oil on medium in a large soup pot. Add in onions, celery, and carrots. Cook for about 5 minutes, the onion will start to become translucent. Mix in garlic and ginger, cook another 2-3 minutes. Stir in broccoli, tomatoes, broth, turmeric, cinnamon, and cayenne. Allow soup to simmer for 10 minutes or until broccoli softens. Add collards and cabbage, simmer for 2 more minutes. Remove from heat and stir in lemon juice, salt, and pepper, to taste. Serve in a nice big bowl for a hearty meal!
